I mean, ok, most of the time, what people are used to are the harshly pickled beats that come in jars or cans; I know that's what I ate growing up. This recipe has you boiling fresh beets, peeling them, tossing them with red wine vinegar and walnut oil, and serving them with bleu cheese and walnuts. The flavors complement each other well, it's super-easy to make, and you can mix up the beets, vinegar, and oil part in advance and chill it, serving out portions and adding cheese and nuts as you go.
